Jollof Chicken Wings

We all need that go-to chicken recipe that we can just throw together and build a delicious meal around. For me, that’s these Jollof chicken wings. I gave them that name because they’re a great protein to pair with Jollof rice! They really help to make a whole meal out of a delicious pot of Jollof.

Another reason I love these wings is because all they really take is a little bit of time. After letting them sit in a delectable marinade, just pop them in the oven and let the magic happen. Just don’t forget to serve them with a little extra Ata Din Din sauce!

Ingredients

3 Pounds chicken wings
1 Tsp. Dry thyme
1/4 Tsp. Freshly ground black pepper
1 Tbsp. Curry powder
4 Tbsp. Ata Din Din Sauce 
2 Tbsp. Honey
4 Cloves minced garlic
1/2 Medium diced onion
2 Tsp. Tomato paste
4 Tbsp. Oil
1 Tsp. Salt
Scallions, for garnish

Cooking Directions

  1. In a big ziploc bag, combine the dried thyme, freshly ground black pepper, curry powder, Ata Din Din sauce, honey, minced garlic, diced onion, tomato paste, oil, salt and the chicken. Make sure everything is well-combined, and the chicken is well-coated, then place in the refrigerator to marinate for at least 4 hours, or overnight.
  2. Preheat the oven to 350 degrees.
  3. Place the chicken on a baking sheet, and roast for 45 minutes, or longer if you want them crispier.
  4. Let rest for 15 minutes, then serve with extra Ata Din Din sauce and Jollof rice!
