Jollof Rice - the quintessential West African party dish! A “one-pot” pilaf with aromatic curry and thyme seasoning.
1 Cup of Per Boiled Long Grain Rice
1/4 Cup Canola Oil or Butter
1 Tbsp. Jamaican Style Curry Powder
1/2 Tsp Dry Thyme
1/4 Diced Onion
1 Jar Egunsifoods’s Ata Din Din Sauce (Red Pepper)
1 Tbsp. Full Red Tomato Paste
2 Cups of Vegetable or Chicken broth
1/4 Kosher Salt
Sliced Medium Size Beefsteak Tomato
1/2 Sliced Onion
Over a medium heat, in a Sauce Pan add rinsed strained Rice, Oil or Butter and Diced Onion, sauté for 5 minutes. Add Thyme, Curry and Tomato Paste, sauté again for about 3 minutes.
Then add Egunsifoods’ Ata Din Din Sauce (Red Pepper) and broth. Taste and add Salt as desired. Cover with an oven safe lid, once it seamers add Sliced Tomatoes and Onion, cover with a lid, then place in a 350-degree oven and let cook for 30 minutes.
Fluff and serve. Can be paired with Fried Plantain and Meat. Bon Appetit!
